For 4 people


900 g of true squid tails;
200g grated toast;
grated zest of 1 lemon;
extra virgin olive oil;
pine nuts q.s.

Carefully wash the squid using the tentacles only, place them in a bowl with the grated rind of one lemon, a pinch of salt and with plenty of oil.

Let soak for a few minutes and transfer, without eliminating all the oil in another bowl with the breadcrumbs and pine nuts. Breaded slightly and fry in hot oil.

Serve with a handful of toasted pine nuts and grated lemon.
