DiLegami – “Berlingheri” – Grillo
ORGANOLEPTIC PROFILE Straw yellow intense coloured wine with greenish reflections that will turn golden after maturing inside the bottle. The scent is captivating and long-lasting, characterized by mellow citrus notes, especially grapefruit, accompanied by tropical fruits, white-pulped fruits and jasmine in a harmonic complex which re-emerges in the secondary scents.Tasting immediately shows its importance, thanks to its excellent flavour and olfactory balance, its great freshness and persistency on the palate, and best of all thanks to its high mineral content. Suitable for fish starters, main and second courses with seafood and shellfish, white meat second courses, fresh and medium-aged cheeses. To be served at the temperature of 12-13 °C.
BERLINGHIERI GRILLO ORGANIC
Appellation: IGT Terre Siciliane Grillo white wine
Place of production: District of Berlinghieri – Trapani Grapes: 100% organically cultivated Grillo.
Yield per hectare: 70 quintals on medium textured soil at 350 meters above sea level.
Harvest period: Painstakingly hand-picked in the first week of September, using bins of 200 kg.
Winemaking: Short maceration of the skin of the grapes at a low temperature in a reducing environment, soft pressing and fermentation at a controlled temperature. The aging takes place in steel tanks for the 90% of it, while for just the 10% of itthe aging is done in French oak tonneaux. Our technique consistsin the refinement on the fine lees until the spring after the harvest, bottling period. A month before bottling the obtained cuvées are put together and mixed in order to give birth to a unique wine which is the one that will be bottled in the end. An extra month inside the bottle will be necessary to our Grillo to achieve its highest organoleptic expression, which can be appreciated after a year of being bottled.
