Organic Capers are grown on our own plot of land in Pantelleria.
This land also provides certified organic products like capers, olives and Zibibbo variety grapes.
Capers are inflorescences typical of Pantelleria island; they are picked early in the morning, before they bloom. They are picked from May to September on a weekly basis.
After the harvesting and the salting processes, capers are divided according to size (small, medium, large) and bagged. They are variously used in cooking.
The small capers are the most fine ones and are used for salads, pizza, appetizers and raw food recipes.
Rinse thoroughly and leave them to soak for at least 12 hours before use, to remove the excess salt.
We only use products grown on our own plots of land.
