Cuturro comes from the poor farming tradition and is simple and nutritious. The outdated name is mirror of its unrefined origin: it is produced from the coarse grinding of Sicilian Russello durum wheat. In the past, mills were too expensive for farmers so they grinded wheat on lava stone. Still today, cuturro is unrefined and low in gluten: a tasty and complete food.
