Tuna belly (in italian “ventresca”) is the flesh around the abdominal cavity and is the most precious and succulent part of tuna. The exclusive Auriga tuna belly – Cusumano selection – is traditionally boiled: in contrast to steam cooking, this method preserves the organoleptic properties of tuna and ensures a final high-quality level. Auriga tuna belly is completely hand-worked. The manufacturing process is performed by local experts who cut filets to size and manually put them in cans, ensuring the integrity of the product.
