Vastedda della Valle del Belice Cheese
Vastedda is the only Italian stretched curd cheese with sheep milk.
Dairymen produced it in Belice Valley during summer as an alternative for pecorino cheese which had gone bad. Hence the name: “vasta” means “spoiled” in Sicilian dialect.
This cheese is typically produced in Belice Valley (in Western Sicily) and has a peculiar hint of herbs. Try it as a table cheese with a little olive oil.
